In 2005, Sapphire opened as a stylish, upscale bar during a time when downtown was clawing its way out of a decadeslong social and economic depression. Aaron Thompson, one of Sapphire’s first bartenders, then bar manager, then general manager, purchased the business in 2008 because he believed in the concept. Aaron was committed to delivering an elevated, “big city” dining, meeting and cocktail experience to guests and friends. From the beginning, Sapphire has endeavored to provide Knoxville with an unparalleled standard in hospitality. As a pioneer of the downtown Renaissance, Sapphire has consistently offered Knoxville residents and out of town guests a retreat from the average night life experience. By serving contemporary American cuisine, premium and allocated spirits, a boutique wine selection and an award winning bar program, Sapphire presents guests with a memorable social affair. This menu features labors of love from former bar manager, Amie Snyder (2006-2016) as well as new cocktails from bar consultant, Jessica “Rabbit” King and current bar manager, Patrick Joyce. The dining program is curated by owner, Aaron Thompson with the goal of offering new American cuisine that elevates and supports the cocktail and wine programs. Sapphire chooses to support many local institutions, farms and distributors because we believe it’s the right thing to do for the health and well-being of our community. After more than a decade of dedicated service, Sapphire continues to provide sophisticated southern comfort to Downtown Knoxville.
